Another step in our Lenten Journey

As mentioned in an earlier post, as part of our Lenten Journey we will be eating once a week from recipes provided from around the world by CRS Rice Bowl.  The money saved by eating these simple meals that are basic fare in the poorest of countries is then put into the Rice Bowl to be used to provide them with food for the year.

Tonight's meal comes from Guatemala.  Many children in Guatemala must work to help support their families rather than attend school.  CRS will use some of the money donated this Lenten season to encourage families to see the importance of an education so that their children may have a better future.  CRS also provides the teachers with training to help them succeed.


This is the way it would be served in Guatemala.
It may have a fried egg on top.


Being spoiled Americans we added lettuce and tomato.


And of course, sour cream.




Frijoles Volteados
adapted from CRS Rice Bowl Recipes

1 onion, diced
2 cloves garlic, minced
1/2 t. cumin
2 T. Olive Oil
2 cans black beans, drained and rinsed
2/3 c. chicken stock
salt and pepper to taste
Flour Tortillas

Heat oil in a large saute pan.  Add onions, garlic and cumin and cook until tender and fragrant.  Puree the beans with the chicken stock in a blender until they become a smooth paste.  Add blended beans to the onion mixture and heat until thickened.  Serve with warmed tortillas.  Print Recipe
